Torta sa Jagodama 'Riu Pravets' & vjencana torta ⁄ Strawberry Cake 'Riu Pravets' & the wedding cake


     Danas sam napravila uzorke za vjencanu tortu koju cu raditi u Riu Pravets Resort Hotelu, u Bugarskoj. Odlucili su se za jednostavnu i laganu 'Tortu sa Jagodama'. Bila sam spremna provesti malo vise vremena na ovoj torti no njihova zelja bila je ova. Pa evo, da je podijelim i sa vama..




Torta sa Jagodama 'Riu Pravets'
Biskvit:
  • 5 jaja
  • 5 zlica secera
  • 5 zlica brasna
  • 1 zlica ulja
  • 1 prasak za pecivo
  • 1 zlica esencije vanilije (ekstrakta)
Krema:
  • 1⁄2 kg svijezih jagoda
  • 1⁄2 l vrhnja za slag,zivotinjskog
  • 5 listova zlatine ( ili 10 g zelatine u prahu)
  • 5 zlica secera u prahu
  • 5,6 jagoda 
Sirup:
  • 150 ml mlijeka
  • 1 zlica vanilija ekstrakta

Ukras: 
  • 1 crveni preljev za torte
  • 150 g bijele cokolade
  • papir za pecenje
  • nekoliko jagoda
Postupak:
     Zumanjke izradite sa secerom i dodajte izradjeni snijeg od bjelanjaka. Dodajte esenciju vanilije,ulje i prosijano brasno i prasak za pecivo. Pecite na 175'C, 35 min u kalupu 23 cm. Nakon cca 20ak min pokrijte sa alu folijom kako bi vam biskvit ostao svijetle boje. Ohladite.

     Izradite vrhnje za slag. Svijeze jagode ocistite i operite te smiksajte sa blenderom. Dodajte secer u prahu i sve pomijesajte sa vrhnjem. Listove zelatine potopite u zdjelici sa hladnom vodom. Kada se smekani ocijedite ju i  stavite u cistu zdjelicu. Otopite na vodenoj kupelji i dodajte u kremu.

     Tortu slazite u kalupu. Biskvit prerezite na tri dijela. Koru stavite u kalup, natopite sa sirupom,  premazite 1⁄3 kreme, pospite nasjeckanim kockicama jagoda te poklopite drugim biskvitom. Tako zavrsite do zadnje kore i cijelu tortu oblozite ostatkom kreme. Stavite ju u hladnjak da se krema stvrdne. Kada se stvrdne, prema uputama na vrecici napravite preljev za torte i izlijte na povrsinu torte. Ostavit da se stisne. 
     Za to vrijeme na vodenoj kupelji otopite cokoladu. Papir za peci izrezite na pravokutnike (cca 15 komada,ovisi o promjeru torte), visine torte i 3,4 cm sirine. Po jednu zlicu cokolade nanesite na papir i spatulom izravnajte. Ostavite da se ohladi i stvrdne. Skinite kalup sa torte,sa coko plocica odlijepite papir i plocice slazite na stranicu torte. Pospite jagodama i ohladite.

Strawberry Cake 'Riu Pravets'



     Today I made cake examples, testers for a wedding cake that I will make In 'Riu Pravets Resort Hotel' in Bulgaria. The couple decided for a very simple and light Strawberry Cake. I was ready to spend more time doing the cake, to make something more rich but this Cake was what the couple wanted. So I want to share it with you..

Strawberry Cake
Cake:
  • 5 eggs
  • 5 spoons sugar
  • 5 spoons flour
  • 1 spoon sunflower oil
  • 10g baking powder
  • 1 spoon vanilla essence
Filling:
  • 500 g fresh strawberries 
  • 500 ml heavy cream
  • 5 spoons powder sugar
  • 5 leaves gelatin ( 10 g gelatin in powder)
  • 5,6 strawberries, chopped
  • 5,6 strawberries for the decration
Syrup:
  • 150 ml milk
  • 1 spoon vanilla extract
Decoration:
  • red cake jelly
  • 150 g white chocolate
  • couple of strawberries
Mix egg yolks, essence and sugar until yellow and fluffy. Add the oil and the flour mixed with baking powder and mix with spatula. Gradually add mixed egg whites. Bake for 35 min on 175C in a 23cm cake pan. After some 20 min you can cover the cake with alu foil so that the cake doesn't burn on surface.
Puree the strawberries and the sugar and put aside. Place the gelatin leaves in cold water.Once soft, remove all the water and in a small separate bowl melt the gelatin in microwave or on bain marie. Add some puree to the gelatin and then gradually add it back the rest of the strawberries. Add whipped cream and combine everything slowly with spatula.
Cut the cake in 3 layers. Put the first layer to the cake pan and sprinkle with some syrup. Spread 1⁄3 of the filling and place some chopped strawberries around. Cover with a second cake layer and do the same. 
Decorate with the jelly ( make it following the instructions on the packing) , some strawberries and  white chocolate fence. The instructions for a bit different fence you can see here.
