Kapri Torta / Walnut Cake with Wild Fruit & Vanilla filling


Zahtjeva vremena no apsolutno se isplati. Predobra i preukusna kombinacija oraha, vanilije, komadica cokolade i sumskog voca kao kiselkastog kontrasta cijeloj ovoj slatkoj prici. 
Mozete ju napraviti i sa polovicom sastojaka. Torta na jedan kat biti ce jednako privlacna. Jednako divna. Jednako ukusna.





Kapri Torta

Biskvit:
  • 10 bjelanjaka
  • 10 zlica secera
  • 2 zlice brasna
  • 12 zlica mljevenih oraha
  • 100 g grubo mljevene tamne cokolade
Zuta krema:
  • 10 zumanjaka
  • 150 g secera
  • 600 ml mlijeka
  • 1 puding vanilije
  • 1 zlica gustina
  • 1 zlica brasna
  • 2 zlice vanilija ekstrakta
  • 200 g maslaca
Crvena krema:
  • 100 vode
  • 300 g secera
  • 500 g sumskog voca
  • 2 pudinga od jagode
  • 1 crvena zelatina
  • 20 zlica vode
Cokoladni preljev:
  • 100 g tamne cokolade
  • 100 g mlijecne cokolade
  • 50 g maslaca
  • 2-3 zlice ulja

Od sastojaka za kore trebate ispeci dvije kore. Miksajte 5 bjelanjaka i postepeno dodajite 5 zlica secera. U saum dodajte 1 zlicu brasna te 6 zlica mljevenih oraha i 50 g cokolade. Orahe sam ostavila malo krupnije da bude zanimljivije. Puno mi je draze nego sa skroz samljevenima. Pecite na masnom papiru, na 180C oko 25 min. 
Isto napravite i sa drugom korom. Ako vam je draza deblja kora, pecite ih u kalupu 20*30. Ja sam ih ovdje ispekla tako. No ako vam se vise svidja tanja kora onda svaku koru ispecite na velikom limu iz pecnice. 

Za zutu kremu miksajte zumanjke sa 100g secera. Dodajte puding, brasno, gustin i ostatak secera te sve umijesajte u kipuce mlijeko. Mijesajte na stednjaku dok se ne zgusne i prebacite u plastiku. Pokrijte plasticnom folijom i ohladite. Maslac sobne temperature izmiksajte pjenasto te dodajte u kremu.

Za crvenu kremu zakuhajte vodu i secer te dodajte smrznuto voce. Kuhajte dok se voce ne raspadne. Mozete ga i blenderom propasirati. Pomijesani puding i zelatinu u zdjelici pomijesajte sa 20 zlica vode. Dodajte u voce te mijesajte dok se ne zgusne. Ohladite.

Kada budete slagali kolac, na pari otopite cokoladu, maslac. Dodajte ulje.

Kolac slozite tako da prvu koru premazete crvenom kremom, preko zutom pa tankim slojem cokolade. Na to slozite drugu koru pa opet sloj crvene, zute kreme i zavrsite cokoladom.

Cake:
  • 10 egg whites
  • 10 spoons of sugar
  • 2 spoons of flour
  • 12 spoons of walnuts, roughly ground
  • 100 g dark chocolate, roughly ground

  Wild Berries filling:
  • 100 ml water
  • 300 g sugar
  • 500 g wild berries, frozen
  • 2 instant strawberries pudding 
  • 10g package of red jelly / gelatin 
  • 20 spoons of water

Vanilla filling:
  • 10 egg yolks
  • 150 g sugar
  • 600 ml milk
  • 1 instant vanilla pudding
  • 1 spoon flour
  • 1 spoon cornstarch
  • 2 spoons of vanilla extract
  • 200 g butter

Chocolate layer:
  • 100 g dark chocolate
  • 100 g milk chocolate
  • 50 g butter
  • 3 spoons vegetable oil

First make the yellow filling. Bring milk to a boil. Mix egg yolks with sugar until nice yellow and fluffy. Then add the pudding, flour and cornstarch. If it is to hard add a little bit of milk from the pan and whisk. Add half of the hot milk to the eggs, whisk and bring everything back to the pan. Whisk until it thickens. Place it in a plastic bowl, add the extract, cover with the plastic foil and let cool on a room temperature.

For the cake bake 2 layers separately. Mix 5 egg whites by adding 5 spoons of sugar, 1 spoon at the time. When stiff and firm, add 1 spoon sifted flour, 6 spoons of walnuts and 50 g of chocolate. Whisk by hand until combined. Bake in a baking pan 20*30 cm with parchment paper at 180C for 25 min.
Do the same with the second cake layer. Let cool.

For the wild berries filling, place sugar and the water in a pan and bring to a boil. Add the frozen fruit and let shiver for 7,8 min. In a separate bowl mix strawberries pudding, jelly and the water. Mix good so that no little cornstarch bumps stay.
Blend the berries in a puree and add the mixture of pudding. Stir until it thickens. Put aside and let cool.

For the chocolate layer melt the chocolate and the butter and in the end add the oil.

To arrange the cake, put one cake layer and half of the red filling on it. Then put half of the vanilla filling and half of the chocolate which will be very thin. Place the second cake layer and repeat the procedure.

Note:
You can prepare this cake with only half of the ingredients and make a one layer cake. It would be the same delicious and beautiful.
You can also use different kind of red fruit for the red filling.
