Rafaelo Kocke / Raffaello Squares



Vec sam pisala o Kokos Kockama. A ove predivno bijele sam spominjala kao one u najdrazoj veziji. Bozansko bijele. Bozanstveno ukusne. Bozanstveno rafaelo kokosne :) Ovaj puta napravila sam ih po receptu koji je objavila Unikatica. Svoju verziju ovih kocki obukla sam u bijelo i omotala kokosom. Sljedeci puta kada ih budem pravila,probati cu napravit pravu, guscu glazuru od bijele cokolade. Zelim ih pretvoriti u pravu pahulju. Vjerovatno nece biti socne i mekane kao ove jer sto je gusca glazura/umak, kolac ce ga manje upiti. Sav umak ostaje samo na povrsinskom sloju.





Zbog toga,za kokos kocke puno mi je drazi rijedji cokoladni umak. Biskvit ga puno bolje upije i tako dobije nevjerovatnu mekocu. Kod ovih sam pokusala tanko srezati gornji sloj,no nije mi se ucinila kao pametna ideja. Biskvit se dosta mrvio i zbog toga,rezanje plus umakanje u cokoladu nije bila pametna odluka. Ostavila sam ga ovako. No kolac je nesto fantasticno. B koji je postao moj veliki i vjerodostojni kriticar, on se odusevio...



A do tad vi uzivajte barem mali dio od onoga koliko sam ja uzivala i zabavljala se dok sam slikala. Pogledajte i nadam se da ce vam ovo biti jedna mala motivacija da napravitie slicno. Vjerujte,obradovati cete sami sebe :) 





Rafaelo Kocke
biskvit:
  • 150 g bijele cokolade
  • 150 g maslaca
  • 3 jaja
  • 150 g secera
  • 150 g brasna
  • 200 g kokosa
  • 1 prasak za pecivo
  • 250 ml kokosovog mlijeka
cokoladni umak:
  • 200 ml vrhnja za slag
  • 200 ml mlijeka
  • 125 g maslaca
  • 100 g bijele cokolade
  • 100 g secera
  • 150 g kokosa ( za uvaljati)
Postupak:
Na pari otopite bijelu cokoladu i maslac. 
Kada se malo prohladi, dodajte u zumanjke koje ste izradili sa 100 g secera. 
Bjelanjke istucite u snijeg sa 50 g secera (ostatak). 
Dodajte kokosovo mlijeko i lagano rucno promijesajte.
Pomijesajte prosijano brasno,prasak za pecivo i kokos i dodajte pola u smjesu zumanjaka. 
Zatim dodajte snijeg od bjelanjaka i ostatak brasna. Izmjesajte rucno i istresite u kalup za kolace oblozem masnim papirom.
Pecite na 175 C, cca 35 min,dok ne pozlati. Ako vam se prepece,moze vam se puno mrviti.
Za umak sve sastojke zagrijte i otopite na vatri. Ohladite.
Hladan biskvit izrezite na kocke i natopite u cokoladni umak pa u kokos. Malo ce vam se mrviti ,zato sa umakom radite polako. Moze vam se ciniti da je premekan,no kada se ohladi u frizideru,biskvit ce upiti sav umak i dobit cete najbolje rafaelo kocke koje ste ikada probali :). Nakon sto odstoje dan u frizideru,postici ce svoj maksimum okusa.

Raffaello Squares

  

I was already writing about Lamingtons. And these ones are one of my favourite. So white. So delicious. So Raffaello delicioius. This time I tried to make them by the recipe of 'unikatica' on unikatica. I made my version and dressed them  in white chocolate sauce and coconut flakes and got the closest taste to Raffaello Chocolate and best Raffaello  Square ever. The next day they come to their best.
Next time I will try to make completely white chocolate sauce. The one that will be more thick of consistency and then i will get my little completely white snow flakes. They will probably not be as delicious as these ones because the thicker the sauce/dipping is it is harder for the sponge to soak the sauce and become this moist. Because of that I prefer chocolate sauce more liquid. The sponge gets incredibly moist. I tried to cut very thin the surface layer of the sponge and remove this golden color but in the end I decided not to. With this tender sponge and the liquid sauce it was not a good idea. It was difficult to dip them and they were falling apart.  Ok,maybe it was just me because I always leave them in the sauce more then I should in order to soak them more. So I just left it like this and decided to go more with the taste then looks. I made a good decision. These Raffaello Squares are something  amazing! B,who became my big and an important critic, he was just thrilled.. 


So please,enjoy at least a little bit as I was enjoying and making these Raffaello Squares and the photos. I dare you to make the same. Believe me, you will be so happy :)                                              



Raffaello Squares
  • 150 g white chocolate
  • 150 g butter
  • 3 eggs
  • 150 g sugar
  • 150 g flour
  • 200 g coconut flakes
  • 1 baking powder
  • 250 ml coconut milk
white chocolate sauce:
  • 200 ml whipping cream
  • 200 ml milk
  • 100 g sugar
  • 100 g white chocolate
  • 125 g butter
          150 g coconut flakes ( for rolling)


Melt the chocolate and the butter on bain marie. Let cool a little bit.
Mix egg yolks and 100 g sugar until yellow and fluffy. Add the chocolate and mix. 
Separately mix egg whites and 50 g sugar.
In a bowl combine all the dry ingredients, flour,baking powder and coconut and add to the chocolate and egg yolk mixture. In the end whisk in the egg whites and mix until combined.
Bake in a lined pan for 35 min on 175C. On the half way you can cover it with the foil so that it stays light. Check with the toothpick. It should be dry when you take it out.
For the sauce put all the ingredients in a saucepan and heat until everything is nice melted. Set aside and cool a little bit.
Cut she sponge into little squares. Dip each in chocolate sauce and roll them in the coconut.
It is best to lave them to cool in the refrigerator for couple hours. The sponge will soak the sauce and you will get the best Raffaello Squares ever! :)

  1. Raffaello kuglice su meni najdraža poslastica, za kockice još nisam čula, ali po sastojcima mogu samo da budu odlični! Moram isprobati!
