Kolac sa svjezim brusnicama / Cranberry Crumble Cake




Kolac sa svjezim brusnicama
prhko tijesto:

  • 2 1/2 salice brasna
  • 1 salica secera
  • 1/2 salice mljevenih badema
  • 1 zlicica praska za pecivo
  • prstohvat soli
  • 225 g maslaca
  • 1 jaje
  • 1/2 zlicice cimeta
nadjev:
  • 500 g svjezih brusnica 
  • 1 salica secera
  • 4 zlice narancinog soka
  • 1 zlica gustina
  • vanilija

Pomijesajte sve sastojke za nadjev i pustite da odstoji dok zamijesite tijesto. Nakon sto pripremite prhko tijesto, pola utapkajte u kalup oblozen masnim papirom ( tijesto najbolje i najlakse zamjesite u multipraktiku). Istresite nadjev na utapkamo tijesto i ostatak tijesta usitnite rukama i  raspodjelite po brusnicama. Pecite oko 45 min na 185C. Posluzite toplo, hladno, samo, uz tuceno vrhnje ili naaajbolje sa sladoledom :)

Cranberry Crumble Cake
crust and topping:

  • 2 1/2 c flour
  • 1 c granulated sugar
  • 1/2 c almonds, powder
  • 1t baking powder
  • pinch of salt
  • 1 c butter, cold
  • 1 egg
  • 1/2 t cinnamon
filling:
  • 4 c cranberries
  • 1 c sugar
  • 4T orange juice
  • 1 T cornstarch
  • vanilla 

Mix all the ingredients for the filling and put aside while you prepare the crust. If you have food processor big enough, you can make the dough in the processor. Tap half of the amount of the crust in a lined cake/baking dish, spread the cranberry filling and crumble the rest of the crust as topping. Bake for 45 min on 185C. Serve warm, cold, with whipped cream or best warm with ice cream :)
