Sicilijanski kolacici od pistacija ⁄ Sicilian Pistachio Cookies




Kolacici od Pistacija

  • 1 1⁄2 salice pistacija, neslanog
  • 1⁄2 salice badema
  • 1⁄2 salice secera
  • 2 zlicice meda
  • 1⁄2 zlicice vanilija ekstrakta
  • 1⁄2 zlicice ribane korice limuna
  • 1 bjelanjak
  • 1⁄2 salice secera u prahu
  • nekoliko cijelih pistacija za ukras



Bademe sto sitnije sameljite u bademovo brasno. Pistacije sameljite ugrubo. Bjelanjak lagano istucite pjenjacom te dodajte med, vaniliju i sve ostale sastojke osim secera u prahu. Od smjese oblikujte male loptice i uvaljajte u secer u prahu. Slazite na pleh oblozen masnim papirom ostavljajuci mali razmak izmedju kolacica. Za ukras, u svaki kolacic utisnite po pistacij. Pecite 15 min na 180C.

Pistachio Cookies




  • 1 1/2 C pistachios  unsalted, plus extra for garnish
  • 1/2 C almond meal
  • 1/2 C sugar
  • 2 t honey
  • 1/2 t vanilla extract
  • 1⁄2 t lemon zest
  • 1 egg white
  • 1/2 C powdered sugar

Preheat to oven to 350 degrees. In a food processor, pulse the almonds to get the almond meal. Pulse pistachios until finely chopped, not fully ground. Transfer to a large bowl and combine with the vanilla, lemon zest and honey. Add the whites and mix. Add the sugar and gently combine. Form into tablespoon-sized balls and roll in the powdered sugar to coat. Transfer to baking sheets lined with parchment, leaving a distance between cookies. Press a pistachio into each cookie for decoration. Bake for 15 min and let cool.
